Ingredients

  • 2 cups Post Grape-Nuts flakes, crushed
  • 2/3 cup milk
  • 2 (7 oz.) cans tuna, drained and flaked
  • 1/3 cup minced onion
  • 2 tablespoons chopped parsley
  • 4 teaspoons lemon juice
  • 1 teaspoon salt
  • dash of pepper
  • 2 eggs

Instructions

  1. Preheat oven to 375°F.
  2. Combine crushed cereal and milk in a bowl; let stand for 10 minutes.
  3. Add drained and flaked tuna, minced onion, chopped parsley, lemon juice, salt, and pepper; mix thoroughly.
  4. Stir in the well-beaten eggs.
  5. Pour the mixture into a well-greased, aluminum foil-lined 8 x 4-inch loaf pan.
  6. Bake for 45 minutes.
  7. Let stand for 5 minutes after baking.
  8. Remove from the pan and serve with cheese or mustard sauce.
