Tuna Jello Salad

Ingredients

  • 2 cans tuna in water
  • 2 packages lemon jello
  • 1 1/2 cups boiling water
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 cup chopped celery
  • 1 cup chopped nuts
  • 1 cup crushed pineapple
  • 1 cup light mayonnaise
  • 1 cup sour cream

Instructions

  1. Rinse the tuna cans in water, break up the tuna, and drain.
  2. Dissolve the lemon jello in boiling water, stirring until clear and dissolved.
  3. Add salt and lemon juice to the jello mixture and let it cool.
  4. Once cooled, add the drained tuna, chopped celery, crushed pineapple, chopped nuts, mayonnaise, and sour cream. Mix well.
  5. Pour the mixture into a lightly oiled 8 x 12-inch casserole dish.
  6. Refrigerate overnight until set.
  7. Cut into squares and serve on lettuce leaves, garnished with a sprig of mint if desired.
  8. Optional: substitute lime or orange jello for a different color.
