Ingredients

  • 1/4 cup butter
  • 1/3 cup flour
  • 1 1/4 cups milk
  • 4 eggs
  • 1 teaspoon chopped onion
  • 1/4 teaspoon salt
  • dash of pepper
  • 2 tablespoons chopped parsley
  • 7 ounces tin tuna fish

Instructions

  1. Melt butter in a saucepan; blend in flour until smooth.
  2. Gradually add milk; cook over low heat until the sauce boils and thickens, stirring constantly.
  3. Thoroughly beat the egg yolks.
  4. Add the white sauce gradually, stirring to keep it smooth.
  5. Add chopped onion, salt, pepper, parsley, and flaked tuna.
  6. Cool the mixture slightly.
  7. Carefully fold in stiffly beaten egg whites.
  8. Pour into an ungreased 6-cup casserole.
  9. Bake at 325°F (160°C) for about 1 hour or until puffy, high, and delicately browned on top.
  10. Serve immediately.
