Ingredients

  • 1 medium red pepper, diced
  • 1 medium onion, diced
  • butter
  • 3 (6 oz.) cans crab
  • 2 eggs
  • 3/4 cup seasoned bread crumbs
  • 1 heaping tablespoon mayonnaise
  • 3 tablespoons Dijon mustard
  • 1/4 teaspoon pepper
  • 1 teaspoon cayenne pepper
  • 8 drops Tabasco
  • 4 English muffins, split and toasted
  • 2 ripe tomatoes, sliced 1/4-inch thick

Instructions

  1. Saute red pepper and onion in butter until tender.
  2. Mix the sautéed vegetables with crab, eggs, bread crumbs, mayonnaise, mustard, pepper, cayenne, and Tabasco.
  3. Split and toast English muffins.
  4. Place a tomato slice on each muffin half.
  5. Scoop the crab mixture onto each tomato-topped muffin half.
  6. Top with a slice of Swiss cheese.
  7. Place the prepared muffins on a baking sheet and bake until the cheese melts and the mixture is heated through.
