Ingredients

  • 16 oz. can pink salmon
  • 1 large can whole tomatoes
  • 1 green pepper
  • 1 medium onion
  • 3 stalks celery
  • 2 sprigs parsley
  • 1 tsp. oregano
  • 1 Tbsp. flour
  • 2 Tbsp. olive oil
  • 2 Tbsp. soy sauce

Instructions

  1. Heat olive oil in a frying pan over moderate heat.
  2. Drain the salmon and tomatoes, saving the juice from both.
  3. Sauté the chopped onion until translucent.
  4. Add flour to the onion and mix smoothly, letting it brown slightly.
  5. Pour the reserved juice from the salmon and tomatoes into the onion mixture.
  6. Stir in chopped parsley, oregano, soy sauce, and the halved tomatoes.
  7. Simmer the mixture for 5 minutes.
  8. Lower the heat and place the salmon in the pan in single pieces approximately 8 inches long.
  9. Add the celery and green pepper around the salmon.
  10. Do not stir; simply place the sauce on top and simmer for 6 minutes.
  11. Serve with vegetables, sauce, and salmon wedges.
