  • 1 carrot
  • 1/4 tsp. salt
  • 1 egg
  • 1 zucchini
  • 1 celery stalk
  • 3 slices white bread
  • 6.5 to 7 oz. can tuna
  • butter

Instructions

  1. In a bowl, knead cream cheese, flour, and 6 tablespoons of softened butter. Wrap and freeze for 30 minutes.
  2. In a skillet over medium heat, melt 2 tablespoons of butter and cook the minced green onions, shredded carrot, shredded zucchini, and diced celery until tender.
  3. Remove the vegetable mixture from heat and let it cool slightly.
  4. Tear the white bread into small pieces.
  5. Add the drained and flaked tuna and salt to the cooked vegetables.
  6. Divide the dough in half, roll each half into a sheet, and cut into two squares.
  7. Spoon one-fourth of the tuna mixture onto one side of each square.
  8. Brush the edges of the dough with beaten egg.
  9. Fold each square diagonally over the filling to form triangles, pressing the edges together with a fork to seal.
  10. Make slashes in the top of each turnover to vent steam.
  11. Place the turnovers on a cookie sheet and bake in a 350°F oven until golden brown, about 20 minutes.

Tips & Substitutions

For a creamier filling, consider adding a dollop of sour cream or Greek yogurt to the tuna mixture. You can substitute the white bread with whole grain or gluten-free options if desired. Fresh herbs like dill or parsley can enhance the flavor of the filling. If you prefer a crunchier texture, try adding some chopped bell peppers or capers.

Serving Suggestions

These tuna turnovers are perfect as a snack or light meal and pair beautifully with a fresh green salad or a side of roasted vegetables. Consider serving them with a dipping sauce like tartar sauce or a tangy yogurt dip. For a heartier option, serve alongside a bowl of soup, such as tomato or clam chowder.

Storage & Reheating

Store any leftover tuna turnovers in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a preheated oven at 350°F for about 10 minutes, or until heated through, to maintain their crispiness.
