Tuna Zucchini Cakes are savory patties combining flaky tuna, shredded zucchini, and fresh parsley, perfect for a quick, flavorful meal suitable for lunch or dinner.

Ingredients

  • 1 Tbsp. butter
  • 1/2 c. diced onion
  • 1 (6 1/2 oz.) can tuna, drained and flaked
  • 1 c. shredded zucchini
  • 2 eggs, beaten
  • 1/3 c. snipped parsley
  • 1 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 c. seasoned bread crumbs

Instructions

  1. Saute diced onion in butter until tender.
  2. Add drained and flaked tuna, shredded zucchini, beaten eggs, parsley, lemon juice, and salt to the onions, and combine well.
  3. Shape the mixture into six 1/2-inch thick patties.
  4. Coat each patty with seasoned bread crumbs.
  5. Heat oil in a skillet and cook each patty on both sides until golden, approximately 3 minutes per side.
