Turkey Chowder(Low-Fat Soup)
A hearty low-fat turkey chowder bursting with vegetables and herbs, perfect for a comforting and nutritious meal that suits all taste preferences.
Ingredients
- 1 tsp. olive oil ⓘ
- 1 large onion, sliced thin ⓘ
- 1/4 c. chopped green pepper ⓘ
- 3 medium carrots, diced ⓘ
- 3 medium potatoes, peeled and diced
- 2 stalks celery, sliced ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. black pepper ⓘ
- 1/2 tsp. thyme ⓘ
- 1/2 tsp. basil ⓘ
- 1/4 tsp. sage ⓘ
- 1/2 tsp. garlic powder ⓘ
- 6 c. chicken stock ⓘ
- 3 c. cubed cooked turkey ⓘ
- 1 (17 oz.) can creamed corn ⓘ
- 2 tsp. chopped pimento ⓘ
- 1/4 c. chopped fresh parsley ⓘ
Instructions
- Heat oil in a large pot.
- Saute onion and green pepper until onion is translucent.
- Add carrots, potatoes, celery, salt, thyme, basil, sage, and garlic powder. Mix well.
- Add chicken stock and simmer for 15 minutes until potatoes and carrots are soft.
- Add cubed cooked turkey, creamed corn, and chopped pimento.
- Heat through but do not boil.
- Just before serving, stir in chopped parsley and adjust seasonings to taste.
