Ingredients

  • 1 tsp. olive oil
  • 1 large onion, sliced thin
  • 1/4 c. chopped green pepper
  • 3 medium carrots, diced
  • 3 medium potatoes, peeled and diced
  • 2 stalks celery, sliced
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1/4 tsp. sage
  • 1/2 tsp. garlic powder
  • 6 c. chicken stock
  • 3 c. cubed cooked turkey
  • 1 (17 oz.) can creamed corn
  • 2 tsp. chopped pimento
  • 1/4 c. chopped fresh parsley

Instructions

  1. Heat oil in a large pot.
  2. Saute onion and green pepper until onion is translucent.
  3. Add carrots, potatoes, celery, salt, thyme, basil, sage, and garlic powder. Mix well.
  4. Add chicken stock and simmer for 15 minutes until potatoes and carrots are soft.
  5. Add cubed cooked turkey, creamed corn, and chopped pimento.
  6. Heat through but do not boil.
  7. Just before serving, stir in chopped parsley and adjust seasonings to taste.
