Turkey "Everything"
A savory casserole combining tender turkey, crunchy almonds, and fresh vegetables, topped with crispy potato chips—perfect comfort food for family dinners or holiday gatherings.
Ingredients
- 2 c. coarsely chopped cooked turkey ⓘ
- 2 c. diced celery ⓘ
- 1/2 c. cooked rice ⓘ
- 1/2 c. slivered almonds ⓘ
- 1/3 c. chopped green bell pepper ⓘ
- 2 Tbsp. finely chopped onion ⓘ
- 2 Tbsp. lime juice ⓘ
- 1 tsp. salt ⓘ
- 1/4 tsp. black pepper ⓘ
- 3/4 c. mayonnaise ⓘ
- 1/2 c. mushroom soup undiluted ⓘ
- 1/2 c. crushed potato chips ⓘ
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine the cooked turkey, diced celery, cooked rice, slivered almonds, chopped green bell pepper, chopped onion, lime juice, salt, and black pepper.
- In a medium bowl, mix the mayonnaise and undiluted mushroom soup.
- Add the mayonnaise mixture to the turkey mixture and stir to combine all ingredients.
- Pour the mixture into a greased 1 1/2-quart casserole dish.
- Top with crushed potato chips.
- Bake for 30 minutes.
