Ingredients

  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3 tablespoons water
  • 2 cups cubed cooked turkey
  • Fat for frying
  • 1 can (13 1/2 oz.) pineapple chunks
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • 1 tablespoon chicken stock base
  • 1 green pepper, cut into eighths
  • 1 red pepper, cut into eighths

Instructions

  1. Combine beaten eggs, all-purpose flour, and salt in a bowl, then add water and beat until smooth.
  2. Add cooked turkey cubes to the batter and stir well until all pieces are coated.
  3. Heat oil in a frying pan and drop in turkey pieces, frying until browned on all sides. Keep warm.
  4. Drain pineapple chunks, reserving the juice, into a saucepan.
  5. Blend cornstarch into the pineapple juice to thicken.
  6. Add butter, pineapple chunks, chicken stock base, and soy sauce to the saucepan.
  7. Simmer the mixture for 5 minutes, stirring frequently.
  8. Add the fried turkey to the sauce and serve immediately.
