Turkey-Potato Casserole
A comforting turkey and potato casserole layered with broccoli and seasoned with Parmesan, perfect for a hearty family dinner or leftovers.
Ingredients
- 1 (5.5 oz.) package au gratin potatoes ⓘ
- 4 cups boiling water ⓘ
- 1 teaspoon salt ⓘ
- 1 tablespoon margarine, melted ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 1 (10 oz.) package frozen chopped broccoli, thawed ⓘ
- 1 medium stalk celery, sliced ⓘ
- 1 medium onion, chopped
- 2 tablespoons margarine
- 1 1/2 cups milk ⓘ
- 1/4 teaspoon dry mustard ⓘ
- 2 1/2 cups cooked turkey or chicken, cut-up ⓘ
Instructions
- Grease a square baking dish.
- In a 2 1/2-quart bowl, cover potatoes with boiling water and stir in salt.
- Let stand uncovered for 15 minutes, then drain.
- Toss the drained potatoes with melted margarine and Parmesan cheese.
- Press the potato mixture into the bottom of the prepared dish.
- Top the potato layer with thawed chopped broccoli.
- Preheat oven to 375°F and bake until heated through and bubbly.
