Ingredients

  • 1 eggplant, cut in shoestring strips
  • boiling water
  • 1 lb. turkey breast steak, cut in strips
  • 1 Tbsp. cornstarch
  • 2 Tbsp. soy sauce
  • 1 Tbsp. sherry wine
  • 4 Tbsp. oil
  • 5 hot peppers, shredded fine
  • 1 small clove garlic, chopped fine
  • 1 Tbsp. fresh ginger, chopped
  • 1/2 cup chicken stock

Instructions

  1. Cover the eggplant with boiling water; let stand for 5 minutes and drain well.
  2. Dredge the turkey meat in a mixture of cornstarch, soy sauce, and sherry.
  3. Heat a pan; add oil and sauté hot peppers until they turn color.
  4. Remove the hot peppers from the pan.
  5. Sauté the turkey in the same pan until cooked through.
  6. Add the eggplant, garlic, sautéed peppers, ginger, and chicken stock.
  7. Heat thoroughly and serve.
