Ingredients

  • 2 lb turtle meat
  • 1/2 Tbsp lard or oil
  • 1/2 Tbsp butter
  • 2 Tbsp flour
  • 2 tomatoes
  • 1 onion
  • thyme
  • parsley
  • bay leaf
  • 1 clove garlic
  • allspice
  • 1 sq ham
  • 2 hard-boiled eggs
  • 2 slices lemon
  • 2 qt water
  • sherry wine
  • salt
  • cayenne pepper

Instructions

  1. Boil the turtle meat until tender and save the liquid for the soup.
  2. In a large pot, heat lard or oil and butter.
  3. Add chopped onion and cook until translucent.
  4. Stir in flour and cook briefly to form a roux.
  5. Add chopped tomatoes, garlic, thyme, parsley, bay leaf, and allspice.
  6. Pour in the reserved turtle meat liquid and water.
  7. Add the turtle meat and ham, then simmer until flavors meld.
  8. Season with salt, cayenne pepper, and sherry wine to taste.
  9. Add the hard-boiled eggs and slices of lemon just before serving.
