Ingredients

  • 1/3 cup bacon grease
  • 1/2 cup flour
  • 1/4 cup green onion tops
  • 1/4 cup green peppers
  • 1/3 cup celery
  • 2 cups chicken bouillon
  • 1 cup hot sauce (picante)
  • 2 cans tomato sauce
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon minced onion
  • 1 teaspoon minced garlic
  • 1/4 teaspoon file
  • 1/4 teaspoon thyme
  • 1/2 teaspoon tarragon
  • 1/2 teaspoon basil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon parsley
  • 1/4 teaspoon Accent

Instructions

  1. Brown flour in bacon grease; simmer for 30 minutes until browned.
  2. Saute green onion tops, green peppers, and celery; set aside.
  3. Add remaining ingredients to the flour mixture; simmer for 1 hour.
  4. Add shrimp and sautéed vegetables to the gumbo.
  5. Serve over rice.
