Ingredients

  • 2 c. diced potatoes
  • 1/2 c. sliced carrots
  • 1/2 c. sliced celery
  • 1/4 c. chopped onion
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. boiling water
  • 1/3 c. margarine
  • 1/4 c. flour
  • 2 c. milk
  • 2 1/2 c. shredded sharp Cheddar cheese
  • 8 slices bacon

Instructions

  1. Mix potatoes, carrots, celery, onion, salt, and pepper in a saucepan; add boiling water.
  2. Cover and simmer for 20 to 30 minutes or until vegetables are tender; do not drain.
  3. In a separate saucepan, melt margarine over medium heat.
  4. Add flour to the melted margarine and cook, stirring constantly, until smooth and bubbly.
  5. Gradually add milk, stirring constantly until the mixture thickens.
  6. Stir in shredded Cheddar cheese until melted and smooth.
  7. Add the cooked vegetables and broth to the cheese mixture and heat through.
  8. Crumble cooked bacon and sprinkle over the soup before serving.
