Vaughan's Potatoes are crispy, cheesy potato balls with a flavorful coating, perfect as an appetizer or snack for family gatherings or casual get-togethers.

Ingredients

  • 3 medium potatoes (about 1 lb.), peeled and quartered
  • 1/4 cup grated Parmesan cheese
  • 1/2 (3 oz.) package cream cheese
  • 1 tablespoon butter or margarine
  • 1 1/2 cups cornflakes, coarsely crunched
  • 1 tablespoon chopped green onion (optional)
  • 1/2 envelope (2 1/2 tsp.) instant onion soup mix
  • dash of pepper
  • dash of bottled hot pepper sauce
  • 1 to 2 tablespoons milk
  • 1 beaten egg

Instructions

  1. In a saucepan, cook potatoes in boiling unsalted water about 20 minutes or until tender. Drain and mash.
  2. Stir in Parmesan cheese, cream cheese, butter or margarine, chopped green onion, onion soup mix, pepper, and hot pepper sauce. Mix well.
  3. Add 1 to 2 tablespoons milk if mixture is dry. Shape mixture into 8 balls.
  4. Dip each ball in beaten egg, then roll in coarsely crunched cornflakes.
  5. Place on a greased baking sheet and bake in a 400°F oven for 10 to 15 minutes or until hot and crisp.
