Ingredients

  • 1.5 lb veal cutlets
  • salt
  • pepper
  • 1/2 tsp garlic powder (optional)
  • 2/3 cup finely chopped celery
  • 2/3 cup finely grated carrots
  • 2 tbsp snipped parsley
  • 1/2 tsp crushed rosemary
  • 1 cup chopped onions
  • 1.5 cups beef bouillon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the veal into 6 even slices.
  3. Season the veal slices with salt, pepper, and garlic powder if using.
  4. Combine the chopped celery, grated carrots, snipped parsley, crushed rosemary, and half of the chopped onions in a bowl.
  5. Spoon one-sixth of the vegetable mixture onto each veal slice.
  6. Roll up each veal slice and secure with toothpicks.
  7. Season the rolled veal with paprika if desired.
  8. Place the remaining chopped onions in the baking pan with the veal rolls.
  9. Bake at 425°F (220°C) for 30 minutes or until golden brown.
  10. Lower the oven temperature to 350°F (175°C) and continue baking for an additional 45 minutes.
