Ingredients

  • 2 Tbsp. olive oil
  • 1/2 medium onion, diced
  • 1 stalk celery, diced
  • 1 carrot, peeled and shredded
  • 1 lb. ground veal
  • 3 Tbsp. parsley
  • 1/2 c. bread crumbs
  • 1/2 tsp. nutmeg
  • 2 eggs
  • 1 tsp. salt
  • black pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Heat olive oil in a frying pan and add the diced onion.
  3. Saute for 3 minutes, then add the diced celery and shredded carrot.
  4. Saute for five minutes over medium-high heat.
  5. Mix the cooked vegetables into the ground veal.
  6. Add the parsley, bread crumbs, nutmeg, eggs, salt, and black pepper.
  7. Mix everything well until combined.
  8. Lightly oil a baking dish.
  9. Divide the mixture into small individual loaves.
  10. Place the loaves in the baking dish and bake for 15 to 20 minutes.
