Vegetable Jello Salad

A colorful and refreshing vegetable jello salad combining crisp vegetables with tangy dressing, perfect for potlucks, picnics, or as a unique side dish for any gathering.

Ingredients

  • 1 pkg. lime jello
  • 1 c. hot water
  • 1/2 c. cold water
  • 2 Tbsp. mayonnaise
  • 2 Tbsp. vinegar
  • 2 c. cabbage, finely chopped
  • 1/3 c. green pepper, finely chopped
  • 1/3 c. green onions, finely chopped
  • 3 to 5 radishes
  • 1/2 c. celery
  • stuffed olives, sliced

Instructions

  1. Mix lime jello, hot water, cold water, mayonnaise, and vinegar together.
  2. Let the mixture cool until it thickens slightly, then whip to combine.
  3. Finely chop cabbage, green pepper, green onions, radishes, and celery.
  4. Add the chopped vegetables to the whipped jello mixture.
  5. Slice stuffed olives and place them in the bottom of the jello mold.
  6. Pour the jello mixture over the olives in the mold and refrigerate until set.
