Ingredients

  • 1 lb. carrots
  • 1 lb. fresh green beans or 16 oz. frozen green beans
  • 4 medium leeks
  • 14 1/2 oz. can chicken broth
  • 2 Tbsp. melted butter
  • 2 Tbsp. snipped parsley

Instructions

  1. Peel carrots and cut in half crosswise and quarter lengthwise.
  2. Snap green beans and cut in half.
  3. Cut off the roots of the leeks and remove coarse outer leaves.
  4. Cut off all but 2 inches of the green tops of the leeks.
  5. Cut leeks in half lengthwise.
  6. Place chicken broth in a large saucepan and bring to a boil.
  7. Add green beans and return to boiling, cover, reduce heat and simmer for 10 minutes.
  8. Add carrots and leeks, return to simmer, cover, and cook for 6 to 8 minutes or until tender.
  9. Drain vegetables and arrange on a platter.
  10. Drizzle with melted butter and sprinkle with snipped parsley.
