Ingredients

  • 1 Tbsp. vegetable oil
  • 1/2 c. chopped onion
  • 2 garlic cloves, minced
  • 1 (16 oz.) can tomatoes in juice, chopped
  • 1 c. low sodium chicken broth
  • 1 c. sliced carrots
  • 1 c. sliced celery
  • 1/4 c. chopped fresh parsley
  • 1 tsp. basil, crushed
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. frozen lima beans
  • 1/2 c. water

Instructions

  1. In a medium saucepan over medium-high heat, heat the vegetable oil and cook the chopped onion and minced garlic for about 3 minutes or until soft, stirring frequently.
  2. Add the chopped tomatoes in juice, low sodium chicken broth, sliced carrots, sliced celery, chopped parsley, crushed basil, salt, and pepper. Bring to a boil, then reduce heat and cover.
  3. Simmer for about 20 minutes.
  4. Add the frozen lima beans and water; bring to a boil.
  5. Reduce heat and cover.
  6. Simmer for about 20 minutes or until the lima beans are tender.
