Ingredients

  • soup bone
  • 1 lb beef cubes
  • 1/3 cup lima beans
  • 1/3 cup soup beans
  • 1/3 cup barley
  • 2 carrots
  • 2 potatoes
  • 1 large onion
  • 1 stick celery
  • 1/4 cabbage
  • 1 can tomato sauce
  • 1 can or bag frozen mixed vegetables
  • salt

Instructions

  1. Soak beans overnight.
  2. In a large cook pot, add about a quart of water, beef cubes, soup bone, soup beans, and lima beans. Cook slowly about 2 hours.
  3. Remove the soup bone.
  4. Add barley, tomato sauce, and salt.
  5. Cook about 30 minutes.
  6. Add diced carrots and onion; stir often to keep barley from sticking.
  7. Add potatoes and cabbage, and cook until vegetables are tender.
  8. Add frozen mixed vegetables last and cook for about 15 minutes.
  9. Add water if the soup becomes too thick.
