- Preheat the oven according to puff pastry package instructions.
- In a large bowl, combine washed spinach, diagonally sliced carrots and zucchini, diced drained tomatoes, salt, pepper, celery salt, and lemon juice. Mix well.
- Roll out the puff pastry sheet on a lightly floured surface to smooth and slightly enlarge it.
- Spread the vegetable mixture evenly over the pastry sheet, leaving a border around the edges.
- Roll up the pastry over the filling, sealing the edges to form a compact log or rectangle.
- Place the wrapped Wellington seam-side down on a baking sheet lined with parchment paper.
- Bake in the preheated oven for approximately 30 minutes, or until the pastry is golden brown.
- Remove from oven and let rest for a few minutes before slicing and serving.
