Ingredients

  • 3 c. leaf spinach, washed and dry
  • 2 1/2 c. carrots, cut diagonally
  • 2 1/2 c. zucchini, sliced diagonally
  • 2 c. tomatoes, diced and well drained
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. celery salt
  • 2 tsp. lemon juice
  • 1 sheet Puff Pastry
  • 1 strip Puff Pastry (16 inches)

Instructions

  1. Preheat the oven according to puff pastry package instructions.
  2. In a large bowl, combine washed spinach, diagonally sliced carrots and zucchini, diced drained tomatoes, salt, pepper, celery salt, and lemon juice. Mix well.
  3. Roll out the puff pastry sheet on a lightly floured surface to smooth and slightly enlarge it.
  4. Spread the vegetable mixture evenly over the pastry sheet, leaving a border around the edges.
  5. Roll up the pastry over the filling, sealing the edges to form a compact log or rectangle.
  6. Place the wrapped Wellington seam-side down on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for approximately 30 minutes, or until the pastry is golden brown.
  8. Remove from oven and let rest for a few minutes before slicing and serving.
