Ingredients

  • 1 cup uncooked rice
  • 1/2 cup chopped onion
  • 2 minced garlic cloves
  • 2 tablespoons oil
  • 1 cup chopped coarsely zucchini
  • 1 cup chopped green onion
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups chopped tomatoes
  • 16 ounces drained kidney beans
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook rice according to package directions.
  2. In a large skillet, sauté onion and garlic in oil until tender.
  3. Add zucchini, green onion, pepper, oregano, and salt.
  4. Cook until crisp and tender, about 5 minutes.
  5. Add tomatoes and beans; cover and heat through.
  6. Serve the vegetable mixture over hot rice and sprinkle with shredded Cheddar cheese.
