Ingredients

  • 1 pkg. eggroll wrappers
  • 1 bag bean sprouts
  • 2 medium carrots
  • 1 onion
  • 3 green onions
  • 1 cabbage
  • 1 cup cashew halves
  • 1 egg
  • 2 Tbsp. margarine
  • oil for deep frying
  • soy sauce

Instructions

  1. Fry chopped cabbage in a pan until tender and water is nearly cooked out.
  2. Season with salt, pepper, and 1 tablespoon margarine in 2 cups water.
  3. Sauté onions and shredded carrots in 1 tablespoon margarine.
  4. Combine sautéed onions, carrots, and cashews with the cooked cabbage and simmer for 15 minutes or until carrots are tender.
  5. Add bean sprouts and simmer for an additional 5 minutes.
  6. Season the mixture with salt, pepper, and soy sauce.
  7. Let the mixture cool completely.
  8. Divide the cooled mixture evenly and place it centered between two corners of an eggroll wrapper.
  9. Roll the wrapper to form an eggroll, folding in the sides as you go, sealing the edge with raw egg white or yolk.
  10. Deep fry the eggrolls in oil until lightly browned and crispy.
  11. Serve hot with rice.
