Veggie Wraps

Colorful veggie wraps filled with sautéed vegetables, beans, and corn, seasoned with chili and cumin, perfect for a quick, healthy, and flavorful meal suitable for vegetarians.

Ingredients

  • 1 pkg. wraps
  • 2 large onions sliced
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 2 large carrots cut in matchstick size pieces
  • 1 zucchini cut in matchstick size pieces
  • 1 yellow squash cut in matchstick size pieces
  • 1 c. broccoli florets
  • 1 c. cauliflower florets
  • 1 c. black beans drained and rinsed
  • 1/2 c. frozen corn
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • salt and pepper to taste

Instructions

  1. Saute all vegetables in 2 tablespoons olive oil until tender crisp.
  2. Sprinkle with chili powder, ground cumin, salt, and pepper.
  3. Add corn and black beans to the vegetables and cook for another 2 minutes.
  4. Place the veggie mixture on warm wraps with a dollop of sour cream.
  5. Roll up the wraps to serve.
