  • 1 c. fresh mushrooms
  • 1/2 c. chopped nuts
  • 1/4 c. vegetable oil
  • 1/4 tsp. salt

Instructions

  1. Cook the vermicelli according to package directions, omitting salt.
  2. Drain and set aside.
  3. Drain artichoke hearts, reserving 1/4 cup marinade.
  4. Chop the artichoke hearts.
  5. Combine vermicelli, chopped artichoke hearts, tomatoes, mushrooms, nuts, and parsley in a large bowl.
  6. Mix well and set aside.
  7. In a jar, combine the reserved marinade, vegetable oil, red wine vinegar, minced garlic, salt, dried basil, and pepper.
  8. Cover tightly and shake vigorously to make the vinaigrette.
  9. Pour the vinaigrette over the vermicelli mixture and toss gently.
  10. Cover and chill thoroughly before serving.
