Ingredients

  • 1 to 3 cups veal or pork (cooked, leftover)
  • 2 tablespoons lemon juice
  • salt and pepper to taste
  • 4 tablespoons catsup
  • 1 tablespoon oil
  • 1 tablespoon minced onion
  • 1 clove garlic, minced
  • 8 ounces cooked noodles
  • 1/4 cup sliced pimento
  • 2 cups chicken broth
  • 1 cup mushrooms (fresh or canned)
  • 1 cup shredded cheese

Instructions

  1. Combine the cooked meat, lemon juice, salt, pepper, catsup, oil, minced onion, and minced garlic in a pot.
  2. Simmer slowly for about 20 to 30 minutes.
  3. Mix the meat mixture with cooked noodles, sliced pimento, chicken broth, and mushrooms.
  4. Transfer to a baking dish, sprinkle with shredded cheese and crumbled potato chips.
  5. Bake at 325°F until it bubbles and the cheese is melted.
