Waffle and Pecan Stuffing
Ingredients
- buttermilk, waffles- 10 toasted and cut into bite size pieces ⓘ
- 2 tablespoons butter ⓘ
- 1 yellow onion, chopped ⓘ
- 14 cup celery, chopped ⓘ
- 1 granny smith apple, chopped ⓘ
- 12 cup chopped pecans ⓘ
- 1 cup chicken stock ⓘ
- 14 cup buttermilk ⓘ
- 1 tablespoon maple syrup ⓘ
- 1 tablespoon brown sugar ⓘ
- 2 eggs ⓘ
- 12 teaspoon sage ⓘ
- 12 teaspoon thyme ⓘ
- salt ⓘ
- black pepper ⓘ
Instructions
- saute onion, celery and apple in butter until softened.
- add herbs add seasoning to mixture.
- add chicken stock, brown sugar and maple syrup and reduce slightly.
- add waffles and toss until softened.
- add buttermilk and pecans and toss until completely coated followed by egg mixture to bind everything together.
- spoon stuffing into a casserole dish and cook at 350F for 45 minutes or until browned.
- let stand for 5 minutes and enjoy.
