Tips & Substitutions

For best results, use fresh herbs instead of dried parsley flakes, if available. You can substitute the ground veal with additional ground chuck or turkey for a leaner option. If you prefer a spicier kick, consider adding crushed red pepper flakes. Adjust the salt according to your taste, especially if your tomatoes are salted.

Serving Suggestions

Serve slices of Wayne's Super Meat Loaf with a side of mashed potatoes, such as Green Onion And Bacon Mashed Potatoes, and a fresh garden salad. This hearty dish also pairs beautifully with roasted vegetables or a tangy coleslaw. For a complete meal, consider serving it alongside crusty bread to soak up the juices.

Storage & Reheating

Leftover meatloaf can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, slice the meatloaf and warm it in the microwave or oven until heated through. For optimal flavor, add a splash of the reserved tomato juice while reheating to keep it moist.

Frequently Asked Questions

Can I make this meatloaf ahead of time?

Yes, you can prepare the meat mixture a day in advance and store it in the refrigerator. Just shape it in the roaster and bake it when ready. This allows the flavors to meld together, enhancing the overall taste.

What can I substitute for corn flakes?

If you don't have corn flakes, you can use crushed crackers, breadcrumbs, or even rolled oats as a binder. Each option will give a slightly different texture but will still hold the meat mixture together effectively.

How do I know when the meatloaf is done?

To check if the meatloaf is fully cooked, use a meat thermometer to ensure it reaches an internal temperature of 160°F. Alternatively, you can cut into the center to check that it’s no longer pink and the juices run clear.
