Ingredients

  • 3 eggs
  • 1 cup brown sugar
  • 3 teaspoons maple flavoring
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/3 cup sesame seed
  • 1 cup oil
  • 1 cup white sugar
  • 2 cups shredded zucchini
  • 1/2 cup toasted wheat germ
  • 1 teaspoon salt
  • 1 cup chopped walnuts

Instructions

  1. Beat eggs; add oil, brown sugar, and maple flavoring and beat until thick and foamy.
  2. Stir in shredded zucchini, flour, wheat germ, baking soda, salt, baking powder, and chopped walnuts.
  3. Divide batter into two greased 5 x 9-inch loaf pans.
  4. Sprinkle sesame seed on top of each loaf.
  5. Bake at 350°F (175°C) for 1 hour, or until a toothpick inserted into the center comes out clean.
