Ingredients

  • 1 Tbsp. margarine
  • vegetable cooking spray
  • 1/2 cup finely chopped onion
  • 1 cup finely chopped unpeeled Granny Smith apples
  • 2 cups cooked wild rice
  • 3/4 cup low sodium chicken broth
  • 1/4 cup unsweetened apple juice
  • 1/4 cup raisins
  • 1/2 tsp. salt
  • 1/2 tsp. dried rubbed sage
  • 1/2 tsp. dried whole thyme
  • 1/8 tsp. ground nutmeg
  • 6 slices cracked wheat bread, cut into 1/2-inch cubes

Instructions

  1. Melt margarine over medium heat in a large skillet coated with cooking spray.
  2. Add chopped onion and celery; sauté for 3 minutes.
  3. Add chopped apples; sauté for 5 minutes or until apple is tender.
  4. Combine the apple mixture, cooked wild rice, chicken broth, apple juice, raisins, salt, sage, thyme, and nutmeg in a 2-quart casserole dish.
  5. Stir well to combine.
  6. Cover and bake at 350°F for 40 minutes.
  7. Uncover and bake for an additional 5 minutes.
