Ingredients

  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons soda
  • 3/4 teaspoon salt
  • 1 1/2 cups buttermilk
  • 3/4 cup soft butter
  • 3 eggs
  • 1 1/2 teaspoons vanilla
  • 1 cup golden raisins
  • 1/2 cup chopped nuts
  • 1 tablespoon grated orange rind

Instructions

  1. Measure all ingredients into a bowl.
  2. Blend for 30 seconds on low speed.
  3. Beat for 3 minutes at high speed, scraping the bowl constantly.
  4. Pour batter into the prepared pan.
  5. Bake at 350°F (175°C) for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  6. If making layered cakes, bake in two 9-inch pans for about 30 minutes each.
