Tips & Substitutions

For added flavor, consider sautéing the onion in a bit of olive oil before adding it to the broth. If you don't have parsnips, you can substitute them with carrots for a sweeter taste. Adjust the seasoning according to your preference, and feel free to add herbs like thyme or rosemary for extra depth. This chowder can be easily adapted to include other seasonal vegetables.

Serving Suggestions

Serve this chowder with crusty whole grain bread or a light salad for a complete meal. It pairs beautifully with Cucumber-Onion In Sour Cream for a refreshing contrast. Garnish with fresh herbs like parsley or chives for an added pop of color and flavor. This dish also makes a hearty starter for a vegetarian dinner party.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, gently warm the chowder on the stovetop over low heat, stirring occasionally, until heated through. You may need to add a splash of water or broth to loosen it up if it thickens too much in the fridge.
