Yummy Nut Fudge

Rich, crunchy nut fudge combines toasted pecans and roasted peanuts with creamy chocolate, perfect for sharing during holidays or as a decadent snack with friends.

Ingredients

  • 3 cups chopped toasted pecans
  • 4 1/2 cups granulated sugar
  • 1/2 cup margarine
  • 1 (12 oz) can evaporated milk
  • 1 (12 oz) package German sweet chocolate, chopped
  • 1 (12 oz) package semi-sweet chocolate chips
  • 7 oz Marshmallow Creme
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 cup roasted, salted peanuts
  • 1 teaspoon butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a 1 1/2-quart casserole dish, stir together sugar and corn syrup. Microwave at High for 4 minutes.
  2. Stir in peanuts and microwave at High for 3 to 5 minutes, until light brown.
  3. Add butter and vanilla to the syrup, blending well.
  4. Microwave at High for 1 to 2 minutes more.
  5. Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until light and foamy.
  6. Pour mixture onto a lightly greased cookie sheet or an unbuttered nonstick coated cookie sheet.
  7. Let cool for 30 minutes to 1 hour.
  8. When cool, break into small pieces and store in an airtight container.
