Yummy Nut Fudge
Rich, crunchy nut fudge combines toasted pecans and roasted peanuts with creamy chocolate, perfect for sharing during holidays or as a decadent snack with friends.
Ingredients
- 3 cups chopped toasted pecans ⓘ
- 4 1/2 cups granulated sugar ⓘ
- 1/2 cup margarine ⓘ
- 1 (12 oz) can evaporated milk ⓘ
- 1 (12 oz) package German sweet chocolate, chopped ⓘ
- 1 (12 oz) package semi-sweet chocolate chips ⓘ
- 7 oz Marshmallow Creme ⓘ
- 1 teaspoon salt
- 2 teaspoons vanilla ⓘ
- 1 cup sugar ⓘ
- 1/2 cup light corn syrup
- 1 cup roasted, salted peanuts ⓘ
- 1 teaspoon butter ⓘ
- 1 teaspoon vanilla extract ⓘ
Instructions
- In a 1 1/2-quart casserole dish, stir together sugar and corn syrup. Microwave at High for 4 minutes.
- Stir in peanuts and microwave at High for 3 to 5 minutes, until light brown.
- Add butter and vanilla to the syrup, blending well.
- Microwave at High for 1 to 2 minutes more.
- Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until light and foamy.
- Pour mixture onto a lightly greased cookie sheet or an unbuttered nonstick coated cookie sheet.
- Let cool for 30 minutes to 1 hour.
- When cool, break into small pieces and store in an airtight container.
