Yummy Winter Chilli
Ingredients
- 1 tablespoon sunflower oil ⓘ
- 1 large red onion, chopped ⓘ
- 1 celery rib, chopped ⓘ
- 1 teaspoon cayenne pepper ⓘ
- 1 teaspoon cumin seed ⓘ
- 1 tablespoon smoked paprika ⓘ
- 1 kg minced beef ⓘ
- 400 g adzuki beans ⓘ
- 400 g pinto beans ⓘ
- 400 g canned tomatoes ⓘ
- 600 ml beef stock ⓘ
- 2 dark chocolate squares ⓘ
- 300 g long grain rice ⓘ
Instructions
- Heat the oil in a large pan and cook the onion, celery and garlic for 5 mins until softened.
- Add the cayenne, cummin seeds and paprika and cook for one more minute.
- Stir in the beef , beans , tomatoes and stock.
- Bring to the boil and simmer gently for 1 hour.
- In the last 15 minutes cook your rice.
- Stir in the chocolate and check the seasoning.
- Serve ontop of rice and sprinkled with cheese.
