Ingredients

  • 6 small zucchini
  • 1 lb. ground beef
  • 1/2 cup Italian-style bread crumbs
  • 1/4 teaspoon thyme
  • 1/4 cup margarine
  • 4 oz. sharp shredded cheese
  • 1/2 cup chopped onions
  • 1/4 cup flour
  • 2 cups milk

Instructions

  1. Wash and cut off ends of zucchini, then slice into 1/4-inch pieces. Cook in boiling water for 5 minutes or until tender, then drain.
  2. In a skillet, cook ground beef with chopped onions until browned; drain excess fat.
  3. Stir in 1/2 cup bread crumbs, thyme, salt, pepper, and garlic powder if desired. Remove from heat.
  4. In a saucepan, melt 1/4 cup margarine, then blend in flour and 1/2 teaspoon salt. Add milk all at once and cook, stirring, until mixture thickens and bubbles.
  5. Add shredded cheese to the sauce and stir until melted.
  6. Mix the cooked meat mixture into the cheese sauce.
  7. In a 2-quart baking dish, layer half of the zucchini slices, then pour half of the cheese sauce mixture over them.
  8. Repeat layers with remaining zucchini and cheese sauce.
  9. Bake at 350°F for 30 to 35 minutes until bubbly and golden on top.
