Zucchini Beef Bake

- Wash and cut off ends of zucchini, then slice into 1/4-inch pieces. Cook in boiling water for 5 minutes or until tender, then drain.
- In a skillet, cook ground beef with chopped onions until browned; drain excess fat.
- Stir in 1/2 cup bread crumbs, thyme, salt, pepper, and garlic powder if desired. Remove from heat.
- In a saucepan, melt 1/4 cup margarine, then blend in flour and 1/2 teaspoon salt. Add milk all at once and cook, stirring, until mixture thickens and bubbles.
- Add shredded cheese to the sauce and stir until melted.
- Mix the cooked meat mixture into the cheese sauce.
- In a 2-quart baking dish, layer half of the zucchini slices, then pour half of the cheese sauce mixture over them.
- Repeat layers with remaining zucchini and cheese sauce.
- Bake at 350°F for 30 to 35 minutes until bubbly and golden on top.
