Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup light brown sugar, packed
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 egg, beaten
  • 3/4 cup milk
  • 3 tablespoons vegetable oil
  • 1 cup Nabisco 100% bran
  • 1/2 cup grated zucchini, squeezed dry
  • 1/3 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Grease 12 to 15 muffin cups (about 2 1/2-inch size).
  3. In a medium mixing bowl, combine all-purpose flour, light brown sugar, baking powder, salt, and baking soda.
  4. In a small bowl, beat the egg, then stir in milk and vegetable oil; mix in the Nabisco 100% bran.
  5. Let the mixture stand for 5 minutes.
  6. Add grated zucchini, chopped walnuts, and ground cinnamon; mix until well combined.
  7. Stir the wet ingredients into the flour mixture just until blended, do not overmix.
  8. Fill muffin cups about 2/3 full with batter.
  9. Bake for 20 to 25 minutes, until golden brown and a toothpick inserted in the center comes out clean.
