Ingredients

  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup butter or oleo
  • 2 eggs
  • 1 3/4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons baking powder
  • 1 1/2 cups shredded zucchini
  • 3/4 cup coconut, seedless raisins or chopped dates
  • 3/4 cup nuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together light brown sugar, granulated sugar, and butter until smooth.
  3. Add eggs and vanilla, and mix well.
  4. In a separate bowl, whisk together flour, salt, and baking powder.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in shredded zucchini, coconut, raisins or chopped dates, and nuts.
  7. Pour the batter into a greased baking pan and spread evenly.
  8. Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before slicing and serving.
