Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon grated lemon peel
  • 1/2 teaspoon ground cinnamon
  • 1 cup shredded zucchini
  • 1/2 cup chopped walnuts
  • 1/3 cup oil
  • 1/2 cup skim milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a loaf pan.
  3. In a mixing bowl, combine flour, sugar, baking powder, salt, baking soda, lemon peel, and cinnamon.
  4. Stir in shredded zucchini and chopped walnuts.
  5. Add oil and skim milk to the mixture and blend until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from the pan and slicing.
