Ingredients

  • 2 c. zucchini, grated
  • 1 c. flour
  • 1 Tbsp. baking powder
  • 2 eggs
  • 1/4 c. onion flakes or 1 onion, chopped
  • salt and pepper to taste
  • 1/4 c. grated cheese (Romano or Parmesan)
  • garlic powder to taste
  • 3 Tbsp. parsley

Instructions

  1. In a large bowl, mix the grated zucchini, flour, baking powder, eggs, onion flakes or chopped onion, grated cheese, garlic powder, parsley, salt, and pepper until well combined. Adjust the batter consistency with additional flour if too thin.
  2. Heat oil in a large skillet over very hot heat.
  3. Drop batter by tablespoonfuls into the hot oil.
  4. Fry 3 to 4 minutes on each side until golden brown and cooked through.
  5. Remove patties from oil and place on paper towels to absorb excess oil.
