Ingredients

  • 10 c. zucchini, ground
  • 4 c. onions, ground
  • 5 Tbsp. salt
  • 1/2 lb. green bell pepper, ground
  • 1 lb. red bell pepper, ground
  • 2 1/2 c. vinegar
  • 4 c. sugar
  • 1 Tbsp. celery seed
  • 1 Tbsp. nutmeg
  • 1 Tbsp. turmeric
  • 2 Tbsp. corn syrup

Instructions

  1. Combine the ground zucchini, ground onions, and salt in a large bowl and let set overnight.
  2. The next day, drain excess liquid if necessary.
  3. In a large pot, combine the vinegar, sugar, green and red bell peppers, celery seed, nutmeg, turmeric, and corn syrup.
  4. Bring the mixture to a boil, stirring frequently.
  5. Add the drained zucchini and onions to the boiling mixture.
  6. Simmer until the relish thickens slightly, about 10-15 minutes.
  7. Pour hot relish into sterilized jars, seal, and process in a boiling water bath for preservation.
