Zucchini Sausage Bake

A hearty baked zucchini and sausage casserole combining savory sausage, tender zucchini, and cheesy toppings, perfect for family dinners or casual gatherings.

Ingredients

  • 1 lb. bulk Italian sausage
  • 5 Tbsp. unsifted flour
  • 6 c. sliced zucchini
  • 1/2 c. chopped onion
  • 2 Tbsp. butter or margarine
  • 1 (16 oz.) container cottage cheese
  • 1/4 c. Parmesan and Romano cheese
  • 2 eggs
  • 1/2 tsp. garlic salt
  • 1 c. shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the sausage, breaking it into small pieces. Drain excess fat.
  3. Toss the cooked sausage with 1 tablespoon of flour and spread evenly on the bottom of an 11 x 7-inch baking dish.
  4. In the same skillet, cook zucchini and onion in butter until tender but not browned.
  5. Remove from heat and toss with the remaining flour.
  6. Spread half of the zucchini mixture over the sausage in the baking dish.
  7. Spread cottage cheese over the zucchini layer.
  8. Top with shredded Cheddar cheese and Parmesan-Romano cheese.
  9. Repeat with remaining zucchini mixture and cheese layers.
  10. Bake in the preheated oven for about 30 minutes or until cheese is bubbly and golden.
