Ingredients

  • 3 eggs
  • 1 1/2 cups white sugar
  • 1 cup oil
  • 1 teaspoon vanilla
  • 1 cup oatmeal
  • 2 cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups unpeeled raw zucchini
  • 1/2 cup nuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 13 x 9-inch cake pan.
  2. In a large bowl, combine eggs and sugar and mix well. Add oil and vanilla, and mix until smooth.
  3. In a separate bowl, combine oatmeal, flour, cinnamon, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated zucchini and nuts.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing and serving.
