Ingredients

  • 1 large onion
  • 1 large can tomatoes
  • 1/2 cup diced celery
  • Cheddar cheese
  • 2 cups chopped zucchini
  • 1/2 cup chopped green pepper
  • 1 cup instant rice
  • Hamburger (optional)

Instructions

  1. Mix all ingredients except zucchini and cheese.
  2. Simmer until the rice is nearly done.
  3. Add zucchini, making sure it does not overcook.
  4. Take off heat, top with cheese, cover, and serve.
