Ingredients

  • 1 lb dried beans (15 Bean mixture)
  • 2 tablespoons salt
  • 2 quarts water
  • Ham hocks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced (pepper rings)
  • 2 tomatoes, chopped
  • 1 cup tomato sauce
  • 1 teaspoon sugar
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • Ground red pepper
  • Ground pepper
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon paprika
  • 1 teaspoon parsley

Instructions

  1. Wash beans and remove debris.
  2. In a large 7 to 8-quart pot, cover beans with water and add 2 tablespoons of salt.
  3. Soak the beans overnight.
  4. Next morning, drain the beans.
  5. Add 2 quarts of water and ham hocks to the pot.
  6. Bring to a boil, then cover and simmer for 2 1/2 to 3 hours.
  7. Remove ham hocks from the pot.
  8. Remove meat from the bones of the ham hocks.
  9. Shred the meat and add it back into the pot of beans.
  10. Add chopped onions, minced garlic, pepper rings, chopped tomatoes, tomato sauce, sugar, Worcestershire sauce, and bay leaves.
  11. Simmer for 30 minutes.
  12. Add the rest of the spices: ground red pepper, ground pepper, oregano, basil, paprika, parsley, tarragon, and ground clove garlic.
  13. Simmer for another 30 minutes.
  14. Add the ham packet included in the bag of beans about 1 or 2 minutes before cooking is complete. Remove bay leaves.
