Ingredients

  • 3 cups shredded cheese
  • 1 can black beans, rinsed and drained
  • 1/2 cup chopped red bell pepper
  • 1/4 cup sliced green onions
  • 1 (8 oz.) nonfat sour cream
  • 2 chopped jalapeno peppers
  • 1 teaspoon shredded lime peel
  • 1 (8 oz.) jar salsa
  • 1/2 avocado, peeled and chopped
  • 2/3 cup shredded Jack cheese
  • 1/3 cup sliced ripe olives
  • 1 tablespoon cilantro

Instructions

  1. Line a 12-inch platter with lettuce.
  2. Stir black beans, red bell pepper, and green onions together.
  3. Spoon the bean mixture onto the lettuce-lined platter.
  4. Dollop the nonfat sour cream atop the bean mixture.
  5. Sprinkle with chopped jalapeno peppers and shredded lime peel.
  6. Drain excess liquid from the salsa.
  7. Stir the chopped avocado into the salsa.
  8. Spoon the salsa over the sour cream layer.
  9. Sprinkle shredded cheese over the salsa layer.
  10. Top with sliced olives and chopped cilantro.
  11. Serve with tortilla chips.
