Ingredients

- 1/2 cup chopped red bell pepper ⓘ
- 1/4 cup sliced green onions ⓘ
- 1 (8 oz.) nonfat sour cream ⓘ
- 2 chopped jalapeno peppers ⓘ
- 1 teaspoon shredded lime peel ⓘ
- 1 (8 oz.) jar salsa ⓘ
- 1/2 avocado, peeled and chopped
- 2/3 cup shredded Jack cheese ⓘ
- 1/3 cup sliced ripe olives ⓘ
- 1 tablespoon cilantro ⓘ
Instructions
- Line a 12-inch platter with lettuce.
- Stir black beans, red bell pepper, and green onions together.
- Spoon the bean mixture onto the lettuce-lined platter.
- Dollop the nonfat sour cream atop the bean mixture.
- Sprinkle with chopped jalapeno peppers and shredded lime peel.
- Drain excess liquid from the salsa.
- Stir the chopped avocado into the salsa.
- Spoon the salsa over the sour cream layer.
