Ingredients
- 1 lb. ground beef ⓘ
- 1/4 cup seasoned bread crumbs ⓘ
- 2 tablespoons minced onion ⓘ
- 2 tablespoons water ⓘ
- 1 egg ⓘ
- 1/4 teaspoon salt ⓘ
- 3/4 teaspoon Tabasco sauce
- 1 large green pepper ⓘ
- 2 tablespoons olive oil or vegetable oil ⓘ
- 1 medium onion, chopped ⓘ
- 1 clove garlic, minced ⓘ
- 4 cups beef broth ⓘ
- 1 (16 oz.) can tomatoes ⓘ
Instructions
- In a medium bowl, combine ground beef, seasoned bread crumbs, minced onion, water, egg, salt, and 1/4 teaspoon Tabasco sauce.
- Mix well until ingredients are evenly incorporated.
- Shape the mixture into 1-inch meatballs.
- Cover the meatballs and refrigerate until ready to cook.
- Coarsely chop enough green pepper to yield 1/2 cup.
- Cut the remaining green pepper into thin strips for garnish.
- In a large pot, heat olive or vegetable oil over medium heat.
- Add chopped onion and minced garlic; sauté until translucent.
- Add beef broth and canned tomatoes; bring to a boil.
- Gently add the meatballs to the broth and simmer until cooked through, about 20 minutes.
- Add the chopped green pepper and cook for an additional 5 minutes.
- Serve the soup hot, garnished with green pepper strips.
