Ingredients

  • 1 lb. ground beef
  • 1/4 cup seasoned bread crumbs
  • 2 tablespoons minced onion
  • 2 tablespoons water
  • 1 egg
  • 1/4 teaspoon salt
  • 3/4 teaspoon Tabasco sauce
  • 1 large green pepper
  • 2 tablespoons olive oil or vegetable oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 4 cups beef broth
  • 1 (16 oz.) can tomatoes

Instructions

  1. In a medium bowl, combine ground beef, seasoned bread crumbs, minced onion, water, egg, salt, and 1/4 teaspoon Tabasco sauce.
  2. Mix well until ingredients are evenly incorporated.
  3. Shape the mixture into 1-inch meatballs.
  4. Cover the meatballs and refrigerate until ready to cook.
  5. Coarsely chop enough green pepper to yield 1/2 cup.
  6. Cut the remaining green pepper into thin strips for garnish.
  7. In a large pot, heat olive or vegetable oil over medium heat.
  8. Add chopped onion and minced garlic; sauté until translucent.
  9. Add beef broth and canned tomatoes; bring to a boil.
  10. Gently add the meatballs to the broth and simmer until cooked through, about 20 minutes.
  11. Add the chopped green pepper and cook for an additional 5 minutes.
  12. Serve the soup hot, garnished with green pepper strips.
