  • 1 Tbsp. grated orange rind
  • 1 Tbsp. grated lemon rind
  • 1 tsp. vanilla
  • 1 1/2 c. oats
  • 1 c. walnuts
  • 1 c. raisins
  • 1 c. dates, chopped
  • 1 c. coconut

Instructions

  1. Mix flour, baking powder, soda, and salt.
  2. Cream butter until fluffy.
  3. Add sugars gradually and mix well.
  4. Add eggs, grated orange and lemon rinds, and vanilla, then mix thoroughly.
  5. Add the flour mixture and mix well.
  6. Stir in oats, walnuts, raisins, chopped dates, and coconut by hand.
  7. Drop by teaspoon onto baking sheet or form into small balls and flatten.
  8. Bake at 375°F (190°C) for 10 to 12 minutes.
  9. Allow cookies to cool and store for a while to blend flavors.
