Ingredients

  • 6 Tbsp. flour
  • 1/2 tsp. baking powder
  • dash of salt
  • 4 egg whites
  • 5 Tbsp. granulated sugar
  • 4 egg yolks
  • 6 Tbsp. milk
  • 2 c. finely chopped apple
  • 1 c. shredded Gjetost cheese
  • 1 Tbsp. lemon juice
  • 1/4 c. granulated sugar
  • 1/2 tsp. ground cinnamon
  • lemon slices
  • sweetened whipped cream

Instructions

  1. Butter a 10-inch skillet and wrap its handle in foil.
  2. Preheat the oven to 400°F (200°C).
  3. Combine flour, baking powder, and salt; set aside.
  4. Beat egg whites until foamy.
  5. Gradually beat in 1 tablespoon of sugar until stiff peaks form.
  6. Beat egg yolks well, then mix in milk and the flour mixture.
  7. Fold in the chopped apples, shredded cheese, lemon juice, and beaten egg whites.
  8. Spoon the mixture into the heated skillet and spread to the edges.
  9. Blend 1/4 cup of sugar with ground cinnamon and sprinkle over the pancake.
  10. Bake for 10 minutes until baked and glazed.
  11. Garnish with lemon slices and sweetened whipped cream before serving.
